Teppanyaki is a style of cooking where vegetables, meat, seafood, and other ingredients are grilled on an iron griddle.


In Japan, cooking with fire has been practiced since ancient times, starting with direct flame cooking, followed by hearth cooking using firewood or other fuels. During the Edo period, the use of cooking utensils such as shichirin became common. Today, electric hot plates are widely used, making it easy for households to enjoy teppanyaki.
In recent years, various genres such as okonomiyaki, teppanyaki steak, and teppanyaki soba have developed their own unique cultures.


Outside Japan, teppanyaki is known as a distinctive Japanese-style steak serving method. This became popular through Japanese food chains such as Benihana and SHOGUN, which opened in New York in 1964.
